Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week. Tempeh Shepherdess Pie (Veganomicon) and Rainbow Salad (using apples, oranges, bananas, green grapes, blueberries and plums – most of these are on sale at Publix this week)

This is the dish we served at a vegan St. Patty’s Day karaoke party a couple years back. I love the tempeh casserole, but the mashed potatoes are my favorite part!
