A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

Breakfasts:

  • Ginger Peach Pancakes (peaches are on sale at Publix this week at $2.49/lb)

Lunches:

  • Apple Pear and Cucumber Salad (Fuji or Braeburn apples are 99 cents/lb, Anjou or Bosc pears are $1.29/lb and cucumbers are 2 for $1.29)
  • Soup and Salad
  • Leftovers

Monday:

Cajun-Style Stuffed Bell Peppers and Salad (Fresh Express Salad Blends are BOGO at $4.09, FL peppers are $2.49/lb and Hunt’s Natural Tomatoes are BOGO at $1.39)

Tuesday:

Lasagna and Salad (Fresh Express Salad Blends are BOGO at $4.09, FL peppers are $2.49/lb and Hunt’s Natural Tomatoes are BOGO at $1.39)
