A fresh weekly vegan meal plan is posted here at Vegan in the Kitchen every Sunday.

You can view previous meal plans by clicking on the “Meal Plans” category on the right.  Vegan in the Kitchen meal plans are custom-made each week according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.  Please share your ideas for meal plans this week in the comments below.

Breakfasts:

  • Green Smoothies 
  • Breakfast Quinoa with Clementines, Sweet Cherries and Agave (Substituting with Agave and Fresh Sweet Cherries which are on sale this week at Publix at $2.89/lb. Clementines on sale at $5.99/5 lb box)
  • Cereal, Yogurt, Fruit and Nuts (FL Strawberries on sale at $2.99/16-oz pkg)

Lunches:

  • Amy’s Organic Burritos (On sale for $2 ea at Publix this week)
  • Soup and Salad
  • Raw Veggies, Hummus, Pita Chips and Fruit
  • Leftovers
  • Eat out x1

Dinners:

Spinach and Garlic Stuffed Baby Portobello Mushrooms, Mashed Potatoes, Chickpea Gravy and Salad (Publix Salad on sale at 2/$4 and Baby Portobellos on sale at $1.69/8 oz pkg)

Monday:

Tuesday:

Spicy Collards and Black-eyed Pea Soup (using leftover turnip greens and black-eyed peas from New Year’s Day dinner)

Wednesday:

Creamy Pumpkin Penne with Crispy Sage and Toasted Pecans, Green Beans and Salad

Thursday:

Veggie Paella and Salad

Friday:

Pizza Night
