The Peanut Butter Cookie Larabar is by far my favorite flavor. My kids are pickier than I am with raw foods, but this one passes their tests, probably since this bar is like eating dessert!
We are going on a half-day field trip tomorrow, so I thought I would I try to come up with a similar taste for us to enjoy while out. I picked up a couple of jars of peanuts since they are buy one get one free at Publix this week and already had raw pitted dates. This recipe is so simple. Salt and water are the only other ingredients you will need.
Instead of making bars, I molded the sweet mix into a tassy (mini-muffin) pan, chilled in the fridge then popped them out with a butter knife.
Like Peanut Butter Cookie Larabar Recipe:
- 1 Cup Unsalted Roasted Peanuts
- ¼ Cup Raw Pitted Dates
- ½ Teaspoon Salt
- 1/8 Cup Water
Mix all ingredients in food processor until a dough-like ball forms. Mold into bars or in mini-muffin pan. Chill if desired. Makes equivalent to approximately 3 or 4 Larabars.

I can’t believe how easy this recipe is! I also didn’t know peanuts are BOGO at Publix this week. Thanks for the info and the yummy recipe. I can’t wait to try it!

would a VM work for mixing? My food processors died a while ago and I’ve yet to replace. This sounds awesome and great for Rian’s “no sugar, no choclate” snack rule at school!

Andrea, I would try it. Just pulse and watch it closely so you don’t get soup. My blender died (well, I knocked it over and the pitcher broke) last week. I’m crossing my fingers for a Vitamix birthday present from my hubby!
