My weekly vegan meal plan is made according to Publix’s weekly ad, our stockpile and what is ripe in our garden each week.

(No Smoothies for us this week since I broke my blender! Good excuse for finally purchasing that Vitamix)!

Peanut Butter & Jelly Pita Triangles
Soup (Progresso Soups are BOGO at CVS this week. Go HERE for a $1/4 coupon).

Grilled Eggplant, Zucchini and Squash (all on sale for $0.99/lb at Publix this week), Cornbread and Triple Chocolate Surprise Brownies
Tuesday:
Rigatoni with Zucchini and Eggplant, Green Beans and Salad (Grilling veggies on sale for $0.99/lb and Mueller’s pasta is BOGO at $1.29 at Publix this week).
Wednesday:
No Hurry Vegetable Curry (Fresh from the Vegetarian Slow Cooker) and Salad with Papaya Dressing (Papayas also on sale this week at Publix for $0.99/lb)
Thursday:
Green Goddess Pasta (Mueller’s pasta is BOGO at $1.29 and zucchini is $0.99/lb at Publix this week).
Friday:
Pizza Night
