Here is our vegan meal plan for the week. Our weekly meal plan is based on Publix’s weekly ad, our garden and stockpile.

Breakfasts:

Warm and Nutty Cinnamon Quinoa (leftovers from last week)
Fruit/Baby Spinach Smoothies
Peaches and Cream Oatmeal (Peaches, Flax and Silk Soy Creamer added in)
Nutty Waffles w/Cherry Marmalade (Variation of Flax/Walnut Waffles Veg Times 09/10).
Cereal

Lunches:

Creamy Chickpea Salad with Fresh Herbs
Veggie Dogs
Soup
Leftovers

Dinners:

Green Goddess Pasta (See my previous post about this dish HERE). (Broccoli is 2/$4 this week).

Monday
Cauliflower Gratin with Tomatoes and Capers (Veg Times 09/10 omitting the feta). (Cauliflower is 2/$4 this week).

Tuesday
Vegetable Pot Pie

Wednesday
Pasta with Roasted Red Pepper Sauce with Heirloom Tomato Salad (Veg Times 09/10 omitting the cheese) (or Spaghetti; Prego 100% Natural Sauce is BOGO this week)

Thursday
Stir Fry (substituting jasmine rice for egg noodles)

Friday
Pizza Night (Publix GreenWise Pizza is 2/$10 this week)

Saturday
Eat Out
