Here is our vegan meal plan for the week.  Our weekly meal plan is based on Publix’s weekly ad, our garden and stockpile.

What are your vegan meal plans this week?  I would love to read them in the comments below.

Breakfasts:

Fruit/Baby Spinach Smoothies x2
Cereal, Nuts and Applesauce x2
Apple Cinnamon Oatmeal
Oatmeal with kiwi fruit
Warm and Nutty Cinnamon Quinoa (Saturday)

Lunches:

PBJ Banana Burritos! (The kids are excited about this one)!
TLT Pitas (Tofurkey, Lettuce and Tomato)
Soup x2
Leftovers x2
Eat out x1

Dinners:

Sunday
Beefless Tips and Rice, Sautéed Mushrooms and Stewed Squash
(My southern Stewed Squash recipe is very similar to the current Veg Times, July/Aug ’10, Summer Cymlings recipe).

Monday
Beanball Subs with Kiwi, Strawberry and Baby Spinach Salad

Tuesday
Mediterranean Bowtie Pasta (With Olives, Broccoli, Artichokes, Chickpeas, Sundried Tomatoes and Spinach)

Wednesday
Creamy Zucchini and Basil Soup

Thursday
Sweet Potato-Black Bean Tortillas (Vcom) with Guacamole Salad

Friday
Pizza Night

Saturday
Eat Out
