Here is our vegan meal plan for the week.  I shop in a whole new way now with couponing. Our meal plan is based on Publix’s weekly ad, our garden and stockpile.

Breakfasts:

Fruit/Baby Spinach Smoothies x3
Cereal x2
Oatmeal with fruit x1
Pancakes (Saturday)

Luches:

Cucumber, Mango, Black Bean Salad with tortilla chips
Apple Gardein™ chick’n salad wrap™
Tofurkey, Lettuce, Tomato Pitas
Soup
PBJ
Leftovers
Eat out x1

Dinners:

Sunday
Mashed Potatoes with Chickpea Gravy (VWAV), Fried Okra, Baby Spinach Salad with Sliced Tomatoes, Homemade Biscuits (Vcom) with Homemade Peach Jam (thanks, Heidi C!)

Monday
Eggplant Parmesan with romaine salad

Tuesday
Spaghetti, Green Beans, Mediterranean Salad

Wednesday
Cilantro Lime Grilled Tofu, Grilled Zucchini and Squash and Salad

Thursday
Thai Basil Tempeh with Jasmine Rice, Sautéed Mushrooms and Salad

Friday
Pizza Night with Salad

Saturday
Eat Out
